French Peasant Bread

My sister made this recipe the other night when we had dinner at my parents. It's so yummy, I could have seriously eaten it all by myself (I am a pig ya know). And I just love that it's so easy to make. Try it out see what ya think.

French Peasant Bread
2 1/4 tsp. yeast
2 c. warm water
1 T. sugar
2 tsp. salt
4 c. flour
vegetable oil (I used Pam)
cornmeal
melted butter

In a large bowl, dissolve yeast, sugar and salt in water. Add flour and stir with a wooden spoon until blended. Do not knead. Will be lumpy and sticky. Cover and let rise until doubled--about 1 hour. Oil cookie sheet. Oil hands and remove dough from bowl. Divide into 2 loaves and place on cookie sheet. Brush with melted butter and sprinkle with cornmeal. Let rise 1 hour. Bake at 425 degrees for 10 minutes. Reduce heat to 375 degrees and bake an additional 15 minutes. Brush with melted butter again.
